Rainbow Veggie Wrap
A colorful wrap bursting with fresh vegetables and creamy avocado spread. Ready in just 15 minutes β perfect for a quick, wholesome lunch.
Instructions

1Mash the avocado in a small bowl with lime juice, salt, and pepper until smooth and creamy.

2Warm the gluten-free tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

3Spread the avocado mixture evenly over each tortilla, leaving a 1-inch border around the edges.

4Layer the shredded purple cabbage, julienned carrot, sliced bell pepper, and cucumber down the center of each tortilla.

5Top with fresh cilantro leaves and an extra pinch of salt if desired.

6Fold in the sides of the tortilla, then roll tightly from the bottom up. Slice each wrap in half on a diagonal and serve immediately.
